Its also known as grape snails or escargots. This is a traditional species of snails for gourmands of Western Europe. Even ancient authors wrote about grape snails as a dainty. Helix Pomatia reaches its commercial maturity longer than other varieties of the Helix genus, but it has a stable demand among European consumers.
«Big gray» snails. Helix Aspersa Maxima can rightly be called the new market leader. Farmers love it for its growth rate - just one season is enough to make a profit. And gourmets appreciate its refined taste and nutritional value of meat containing a record amount of iron, calcium, magnesium and B vitamins.
The «small gray» snails are slightly smaller than the «large gray». But Helix Aspersa Muller reaches the commercial size faster than other species. It is the most expensive species of the genus Helix due to the unique taste and tenderness of the meat. It's a little more demanding on growing conditions and technology compliance than Helix Aspersa Maxima. But it’s easier to cook because you don’t need to remove the intestines and liver.
